Spiced Spinach & Cheese Tart with Puff Pastry

Ingredients
1 sheet puff pastry, thawed (enough to line six 12cm tart pans)
10 large eggs, whisked
1 1/2 cups fresh spinach, washed and chopped
1 1/2 cups cheese of your choice, shredded (Gruyère or Cheddar are good options)
1 large onion, finely chopped
3 cloves garlic, minced
1 1/2 teaspoons curry powder
Salt and pepper to taste
3 tablespoons olive oil
To serve, watercress and Hot Toddy Kashmiri Tomato sauce
Instructions
- Preheat your oven to 375°F (190°C). Roll out your puff pastry and line six 12cm tart pans, trimming any excess.
- Place a piece of parchment paper over the pastry and fill it with baking beads or dried beans. Bake for about 10 minutes or until lightly golden. Remove beads and paper.
- In a skillet, heat one tablespoon of olive oil over medium heat. Add garlic and sauté until fragrant. Add chopped spinach and cook until wilted. Remove from heat and set aside.
- In the same skillet, add another tablespoon of olive oil and the chopped onion. Sauté until translucent, then add the curry powder, stirring well to combine.
- In a large bowl, whisk together the eggs, shredded cheese, salt, and pepper. Stir in the cooked spinach and onion-curry mixture.
- Evenly divide the egg mixture among the pre-baked puff pastry tart shells.
- Place the tarts in the oven and bake for 20-25 minutes or until the filling is set and lightly golden.
- Allow the tarts to cool before serving.
