Chicken Lollipops With Kashmiri Tomato Marinade

Ingredients

12 chicken lollipops (available prepped from your local butcher)
1/2 cup Hot Toddy Kashmiri Tomato sauce
2 tablespoons olive oil
2 tablespoons honey
1 tablespoon soy sauce
1 teaspoon garlic powder
1 teaspoon ground cumin
Salt and pepper to taste
Fresh cilantro, chopped for garnish
Lime wedges for serving

Instructions

  1. Prepare the marinade: In a bowl, combine the Hot Toddy Kashmiri Tomato Sauce, olive oil, honey, soy sauce, garlic powder, and cumin. Whisk together until fully integrated. Season with salt and pepper to taste. This marinade combines Kashmiri chillies' mild yet vibrant flavours with a hint of sweetness and depth from the honey and soy sauce, creating a perfect balance for the chicken.
  2. Place the lollipops in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well-coated. Seal the bag or cover the dish, refrigerate for at least 2 hours, or overnight for a more profound flavour.
  3. Heat your grill to medium-high heat. Ensure the grill is hot and lightly oiled to prevent sticking.
  4. Remove the lollipops from the marinade, letting excess drip off. Place the chicken on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is golden on the outside and cooked through. The internal temperature should reach 165°F (75°C).
  5. Transfer the grilled chicken lollipops to a serving platter. Sprinkle with chopped cilantro for a fresh herbal note, and serve with lime wedges. The lime adds a refreshing zest that complements the mild spice of the marinade.
